Coconut Power Bites are fun to make, eat, and way better than any old packaged granola bar. These energy boosters have all the protein, fat and carbohydrates needed for blissful balanced snacks. Here are some of the super powered ingredients that make these little bites shine….
Dates: full of iron, magnesium and potassium for oxygen transport, muscle movement, regulating blood pressure, and maintaining proper fluid balance. Naturally sweet, they are rich in carbohydrates and perfect for quick energy; think pre-workout goodness.
Coconut Meat: the white flesh inside the coconut. Mature coconuts have hard white dense meat, while young coconuts have soft, chewy meat. In this recipe we are using shredded coconut, which is from the mature coconut. It has a full texture and sweet earthy flavor.
Coconut Oil: an edible oil pressed from fresh mature coconut meat. It is one of the few plant-based sources of saturated fat. What sets this oil apart from other fats is the medium chain triglycerides, a type of fatty acid that is utilized differently (than most saturated fat) within our bodies. Medium chain triglycerides bypass intestinal digestion/absorption. Instead they are able to enter the liver directly from the blood for utilization and conversion into energy. Always choose organic cold pressed coconut oil when able.
Cashews: neutral flavored, versatile nut. They contain potassium, fiber and vitamins K for heart health. Copper, iron, zinc work together to help keep blood vessels, nerves and our immune functioning in mint condition.
Hemp Seeds: comes from the seeds of the hemp plant. Hemp seeds are the perfect combination of omega-3 and 6 fatty acids and a delicious way to boost your consumption of the anti-inflammatory fats.
Maple Syrup: Unlike most sweeteners, sweet delicious maple syrup has manganese, potassium, zinc and magnesium, plus antioxidants and polyphenols. Darker grades have higher levels of antioxidants and polyphenols then the lighter ones.

- 1 cup Dates, PITTED
- ½ cup Raw Organic Cashews
- 1 tablespoon Organic Peanut Butter
- ¼ cup Hemp Seeds
- ¼ cup Shredded Unsweetened Organic Coconut
- 1 tablespoon Maple Syrup
- 1 tablespoon Coconut Oil
- 1 scoop of Plant Based Protein Powder
- 1. Add pitted dates, cashews, peanut butter, hemp seeds, maple syrup, coconut oil and protein to high-speed blender or food processor. Blend on 2-3 low and alternate on-off blending, to scrap the ingredients off the sides of blender using a spatula.
- 2. Continue to blend until ingredients come together into a sticky ball.
- 3. Once incorporated, spoon out tablespoon size pieces using hands shape into small balls with palm. Roll each bite in shredded coconut to coat outer surface entirely.
- 4. Enjoy or store in airtight container and refrigerated for later should stay for 3 weeks.
