Everyone needs a go-to guacamole recipe! This Citrus-y Guacamole is mashed up in my kitchen regularly, serving up healthy fats and fiber.
Avocados are an amazing source of healthy fats, magnesium and they have more potassium than bananas.
Did you know most of us are not eating nearly enough daily potassium? Potassium balances out sodium levels supporting blood pressure, muscle contractions, nerve function, protects against kidney stones and is essential for heart health.
Avocados are rich in monounsaturated fats and fiber, with about 30 grams of fat and 14 grams of fiber per avocado. Adding avocado boosts the satisfaction factor at your meal and prevent dips in blood sugar healthy fats and fiber stabilize blood sugar.
How to know when my avocado is ripe?
As you may have experienced avocados are a bit touch and go when it comes to ripeness.
The best way to tell what is happening inside your avocado is by the stem or little cap at the top. If the cap comes off easily and underneath is a green spot you have the perfect ready to eat avocado.
This usually happens when the skin turns from green to brown and is firm but not mushy. If it is too mushy you’ll likely find brown spots within. Those brown spots aren’t pretty but a little brown is safe to eat.
Proper Avocado Slicing
Please, please be careful, when slicing avocados!
- Use a cutting board to slice avocado lengthwise stem to bottom.
- Lay the pitted avocado on cutting board, without holding avocado, gently tap the knife blade into the pit, twist the knife to release pit and discard.
- Scoop out avocado into a large bowl and discard the skin.
How to Enjoy Guacamole
- Raw cucumber, radishes, peppers and carrots
- Burritos, tacos, nachos, fajitas
- Toast, burgers, eggs and pita wraps
- Chips, crackers, fries
How to Store/Keep Guac from Browning
Pack in guacamole to a well fitted, airtight container, squeeze lemon juice to cover guacamole then seal the container with air tight lid.
Store for up to 3 days. Drain off or stir in lemon juice before re-serving.
Citrus-y Guacamole
Ingredients
- 4 avocados, scooped
- 1 medium tomato, diced
- 1/2 onion, diced
- 1/4 cup cilantro, finely chopped
- 2 serrano peppers, finely chopped
- 1 lemon, juice
- 1 lime, juice
- fresh ground black pepper
- pinch of salt
Instructions
- Scoop out avocado into a large mixing bowl.
- Mash avocado with fork until creamy texture.
- Add all remaining ingredients, stir and enjoy!
