Here are 3 tips for a nourishing & simple breakfast…
- Check in with your body. Before you even open the refrigerator start your morning with inner inventory. Asking yourself how you feel, what types of food you’d prefer to eat and how hungry you are is a sure way to eat pick out the best option for yourself. This only takes 1 minute!
- Keep your cookware handy. If you haven’t given any thought to the location of your cookware you might want to think about rearranging. If you keep your pan underneath other pots this creates an additional step and barrier to cooking breakfast to begin with. Making eggs in the morning may feel more approachable if you have the spatula, pan, and whisk in an easy to reach space within your kitchen.

Maybe you need to devote 15-20 minutes of your morning routine to making a nourishing breakfast. Easy Scrambled Egg Breakfast Taco
Ingredients
- 2 tortillas
- 4 eggs
- 4 scallions, chopped
- 1/2 cup pico de gallo
- 1 avocado, sliced
- 2 tablespoons cilantro, rough chopped
- 1 jalapeño pepper, sliced
- 1 tablespoon olive oil
- black pepper
- pinch of salt
Instructions
- Heat olive oil in a pan over medium heat, add scallions.
- Whisk the eggs in a bowl seasoning with salt and pepper before adding to the pan, using a spatula to gentle move eggs as they cook until they are soft and fluffy.
- Warm tortilla in the same pan for about 30 secs. to 1 minute.
- Assemble taco with scrambled eggs, pico de gallo, jalapeño, cilantro, and avocado. Add your preferred hot sauce or ketchup.
- Enjoy!
Notes
* I usually push the eggs towards one side of the pan as they’re just about ready to heat the tortilla as the eggs are about done. This way the eggs and tortilla are warm and ready at the same time.
