Whether you are looking for the perfect party side dish or getting adventurous with vegetables maybe turnips are an everyday vegetable for you but I certainly did not grow up eating turnips, it wasn’t until I started to experiment with cooking plant based that I gave turnips a go.
The verdict…Turnips taste like a mixture between a zucchini and cauliflower, they are slightly sweet, peppery and have a really nice texture when roasted, crisp outside and soft inside similar to a potato but less starchy.
Nutrition
Turnips are part of the cruciferous family, the same family as broccoli, cauliflower and cabbage, they are a non-starchy vegetable so they are filled with soluble fiber, which helps prevent spikes in blood sugar as well as insoluble fiber that keeps food moving through the digestive tract.
Turnips are rich in vitamin C, potassium, vitamin B6 and a phytochemical called glucosinolates which a known for protecting cells from harmful free radicals. For roasting the larger varieties of turnips are best, turnips can be a variety of colors including white, purple and black.
Turnip Preparation
Since turnips are root vegetables, dirt can get trapped in the outer skin so they require a little T.L.C. before they are oven ready.
4 steps for prepping turnips for roasting…
-Rinse under cold water using a scrub brush to wash and release dirt
-Next remove the turnip outer skin using a peeler
-Trim off the stem and root with a knife
-Slice the turnip in half and in half again to form turnip wedges.

Oven Roasted Turnips
Ingredients
- 5 turnips peeled, trimmed and sliced in wedges
- ½ cup breadcrumbs. (gluten free are available)
- 1/2 red onion, sliced
- 3 tablespoons olive oil
- 3 garlic cloves, pressed or minced
- 2 tablespoons parsley, fresh roughly chopped
- 1 tablespoon rosemary, dried
- black pepper
- pinch of salt
Instructions
- Pre-heat oven 400°F
- In a large deep ceramic oven safe dish, add prepared turnip wedges.
- Drizzle with about 2 tablespoons of olive oil, stir in baking dish.
- Sprinkle with breadcrumbs, red onion, fresh garlic, dried rosemary, black pepper, salt and remaining olive oil on top.
- Roast in oven for about 35-40 minutes until turnips are golden brown and tender.
- Garnish with fresh parsley and serve warm.
- Enjoy!
