Meet the Pecan Cardamom Apple Crisp…
A quintessential fall dessert, with the boost of plant-based ingredients without compromising taste. This is a no fuss recipe, which means the skin stays on the apples for a boost of fiber, no peeling necessary. The trick here is to cut the apples into very thin slices to keep the skin from overpowering. The coconut oil for the crisp which was really lovely but unsalted grass-fed butter can be substituted 1:1 as well.
The Pecan Cardamom Apple Crisp recipe calls for actual sugar-(grasp!) yes you heard me right, sugar, the notorious for its role in heart disease, obesity and diabetes etc. So why might it be in this recipe you ask?
Coconut Sugar is made from the coconut palm tree it contains an inulin fiber, trace amounts of micronutrients-phytonutrients and antioxidants- it has a raw sugar like texture. Coconut sugar will affect your blood sugar in a similar fashion. Bits of sugar, especially in the company of high nutrient dense ingredients can absolutely be a part of a healthful lifestyle. Substituting in honey or maple syrup is fine as well.
And last but certainly not least, the spices! cinnamon, nutmeg and cardamom for bringing all the festive fall feels your heart desires.

Ingredients
- Apple Filling
- 5-6 large honey crisp apples, skin on thinly sliced*
- ¼ cup coconut sugar or maple syrup
- 1 lemon, juice
- 1 Tbsp. tapioca starch
- ½ tsp. cinnamon
- ½ tsp. cardamom
- ½ tsp. nutmeg
- Crisp
- 1 cup rolled oats
- ½ cup coconut flour
- ¼ cup coconut sugar
- ¼ cup grass-fed butter or coconut oil, melted
- ¼ cup pecans, chopped
- ½ tsp. cinnamon
- pinch of salt
Instructions
- Preheat oven to 350℉
- In a large mixing bowl add sliced apples and all apple filling ingredients, stir with spoon to coat and pour apple mixture into a 9”x13” baking dish.
- Combine all crisp ingredients into a clean large bowl, stir to combine.
- Spoon crisp mixture evenly on top of apple filling.
- Place baking dish on central rack in pre-heated oven for about 50-1 hour, until the top is golden brown and apples are fork tender.
- Let cool for 20 minutes before serving. Serve with vanilla bean ice cream or coconut whipped cream.
- Store for up to 4 days covered in refrigerator.
Notes
*or you can core, peel and slice apples as traditionally done.Leaving the skin on provides minimal texture differences so long as you slice apples thinly.
