This simple salad is super satisfying and filled with nourishing ingredients. Especially as the weather warms up, meals that are low-maintenance and won’t require you to turn on a hot oven are essential.

Chickpeas are an amazing source of plant based protein, fiber and minerals too like magnesium and zinc.
Butterhead lettuce isn’t the most nutrient dense lettuce which you could enjoy as a one lettuce salad or add in a dark leafy green like spinach or arugula to up the nutrient density of vitamin C, A, K, iron and potassium.
Burrata is a creamy cheese that has a rich buttery flavor leaving you super satisfied. If you prefer to skip the cheese a jammy egg would be another delicious alternative that is also rich in protein and fats.
Hempseeds are filled with healthy fats, zinc, magnesium and protein too. They have a very subtle earthy flavor and add a bit of texture too.
Chive Balsamic Dijon Dressing has amazing flavor from fresh chives and oregano which add bioactive compounds quercetin and caffeic acid, that are super anti-inflammatory.

Simple Chickpea and Burrata Salad with Chive Balsamic Dijon Dressing
Ingredients
- 2 small burrata cheese
- 1 head butterhead lettuce
- 4 handfuls of spinach
- 1 8 oz. can chickpeas, drained and rinsed well
- 1/4 cup hempseeds
- 1/4 cup pickled onion*
Herby Balsamic Dressing
- 6 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- 1 tablespoon chives, finely chopped
- 1 tablespoon oregano, finely chopped or dried
- pinch of salt
- fresh ground pepper
Instructions
- Add all dressing ingredients to a large bowl and whisk.
- Assemble greens, chickpeas, pickled onions, sprinkle hempseeds, pull apart burrata with your hands and drizzle dressing on top. Enjoy this with warm sour dough bread if you’d like.
Notes
*For the pickled onion you’ll need to slice and soak 1 small red onion in 1 cup of vinegar, 1 cup of water, 2 tablespoons of maple syrup and salt overnight.
