Ah, the tiny chia seeds small but so mighty. Chia seeds are filled with fiber high soluble fiber, omega 3 fatty acids, and protein as well as minerals like manganese, phosphorus, copper, selenium, iron, magnesium, and calcium. Since chia seeds are so rich in fiber they are excellent for digestion and promoting a satisfied feeling.
Chia seeds are hydrophilic, which means these tiny seeds attract and pull in water, plumping up into a gel like bubble. Chia seeds actually absorb up to 10–12 times their weight in water! This allows the seeds to become gel-like when submerged in fluids. Since chia seeds are so great at attracting water, it’s best to soak in chia seeds in fluid before eating. In this Chocolate Chia Mousse recipe the chia seeds are blended with sufficient fluids from water and coconut milk.

Chocolate Chia Mousse
Ingredients
Chocolate Chia Mousse
- 1/2 cup water
- 1 can coconut milk
- 2 tablespoons coco powder
- 1 banana
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
Toppings
- 1 cup fresh berries
- 1/4 cup cacao nibs
Instructions
- Add all mousse ingredients into a high speed blender, blend on high for 45-60 seconds until smooth.
- Transfer mousse to an air tight container and refrigerate overnight.
- Serve 2 heaping tablespoons with berries, and cacao nibs. Enjoy!
