- Herbs: cilantro, basil, parsely
- Spices: turmeric, cayenne, paprika
- Chili Sauce
- Nutritional Yeast (needs additional water too)
- Cucumber (think like tzatziki sauce )
- Jalapeno Pepper (make sure you de-seed)
Why make your own dressing?While I have noticed a few quality ready made dressings that have come to the market recently. Most store bought salad dressing have processed oils, questionable ingredients and taste ‘eh’ to say the least. There is nothing quite like a homemade dressing. This Cashew Lime Dressing recipe is sort of like ranch with its thick rich texture it is suitable for greens like this Massaged Kale Salad, nachos, tacos, spread on toast or a perfect dip for veggies. Have it however you like!
Nutrition
This Cashew Lime Dressing is dairy free, but still creamy thanks to the healthy fats from avocado oil, and cashews. The fresh lime, garlic and white vinegar add a pop of flavor plus vitamin C, antioxidants and minerals.
Cashew Lime Dressing
Ingredients
- ¾ cup cashews
- ½ cup water
- 1 clove garlic
- 1 tsp. white vinegar
- ¼ tsp. onion powder
- ½ tsp. maple syrup
- ½ lime juice
- pinch of salt
Instructions
- In food processor add all ingredients blend on high, stopping every 30 seconds to scrape down the sides with spatula for a total of about 5 minutes until smooth with some texture from cashews.
- Once smooth, add optional ingredients blending again. Water can be added if a thinner consistency is desired start with one teaspoon.
- Store in a dressing bottle or mason jar in refrigerator for up to 7 days.
