Delicious anti-inflammatory banana walnut bread made with a blend of nut flours, crunchy walnuts, ripe bananas, cinnamon, nutmeg and cloves.
Mmm…warm spiced banana walnut bread, just the thought brings up good feels. Banana bread has kind of been my go-to entertaining recipe since my days at Penn State, when I experimented with using nut flour in the traditional banana bread recipe. The Spiced Banana Nut Bread recipe I’m sharing today is super nutrient dense, gluten-free and dairy-free with no compromise on taste.

Talk about the perfect combination of protein, healthy fat, fiber and carbohydrate, this banana bread has a perfect balance of macronutrients and rich in minerals like magnesium, potassium, copper, and manganese. No added sugars, only natural ones from sweet ripe bananas making this bread super anti-inflammatory, like it a little sweeter? Add a touch of maple syrup to the batter.
What are Nut Flours?
Nut flours are made from nuts like the kind in the Warm Spiced Banana Bread Recipe- coconut, tigernut and almonds- that have been dried before ground finely into textured flours.
Types of Nut Flours
Baking with nut flours to blend types of flours with the proper ratios of protein, fiber and starch. These 3 types of nut flours give way to the perfect texture and flavor.
- Coconut Flour- the white coconut meat that has been baked at a low temperature until dehydrated and ground into a flour consistency.
- Tigernut Flour- tigernut is actually a root vegetable grown in North Africa, but it has a nutty flavor and similar texture to other nut flours.
- Almond Flour- made from blanched almonds that are ground then sifted into super-fine flour.
How to enjoy Spiced Banana Nut Bread?
Spread creamy almond butter and a scoop of cinnamon stewed apples on top. It also tastes lovely with coconut butter, grass-fed butter or ghee and jam. Or eat it au naturale!
Recipe Tips

- Usually quick breads emphasize stirring as little as possible but in the case of the Warm Spiced Banana Nut Bread, stirring is your friend. Stirring for a longer duration, actually works favorable for keeping the bread cohesive.

- Let batter sit for 30-minutes before baking to allow the moisture absorption which can cut down on bake time and yielding firmer bread.
- Lastly sprinkle the walnuts on top the batter is a bit too delicate to hold the walnuts but they taste amazing together.

- 4 bananas, ripe*
- 4 eggs, scramble
- 1/4 cup or 3 heaping tablespoons coconut oil, melted**
- 1/2 cup coconut flour
- 1/4 cup super-fine almond flour
- 1/4 cup tiger nut flour
- 1/4 cup chopped walnuts
- 1 tablespoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cloves
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- pinch of salt
- Pre-heat oven to 350°
- Smash bananas, eggs, coconut oil, vanilla extract whisk together
- In large bowl mix add all dry ingredients excluding chopped walnuts.
- Pour wet ingredients into dry mixture, whisk well to combine.
- Transfer batter into 9" loaf pan lined with parchment paper
- Add one sliced banana on top gentle press into batter and sprinkle walnuts
- Bake for 1 hour to 1 hr. 15 min. Remove loaf from pan with parchment paper and let cool on cooling racks
- Slice and enjoy with peanut butter, chia jam or ghee
- Store in refrigerator for 3-4 days in airtight container.
- *Bananas can be mashed using a hand masher or fork.
- **Melt coconut oil last before whisking all ingredients together, it will coagulate if sitting at room temperature for too long after melting.
- ***Depending on your oven and methods for preparation (see post) it could take 60 minutes to bake through. If banana bread jiggles when you shake put it back in for another 10-15 minutes.
