What are tomatillos? ..

This recipe calls for roasting the however you can use them fresh as well. As for the nutrition tomatillos are a good source of vitamin C with potassium and magnesium.
How to Pick Tomitillos
Look in the refrigerated sections of produce for dry tomatillos with tight fitting husks, take a peek inside the husk to make sure they are free of blemishes.

- 1 pint cherry tomatoes, whole
- ½ vidallia white onion, peeled and sliced in half
- 2 tomatillos, peel husk
- 2 garlic cloves, peeled
- 1 serrano pepper, whole (optional)
- 6 strawberries, diced
- 1 handful cilantro, fine chopped
- pinch of sea salt
- Preheat oven to 400℉ and lin baking sheet with parchment paper
- Place onion, tomatillo, garlic cloves, serrano pepper on parchment paper and roast in oven until just charred about 10 minutes.
- In food processor or high speed blender pulse cherry tomatoes 7-8 times until chunky consistency forms
- Transfer tomatoes from blender into a large bowl and add diced strawberries.
- Place roasted onion, garlic, serrano pepper and tomatillos in food processor and pulse 8-10 times until cohesive and slightly chunky. Let cool.
- Add mixture to tomatoes and stir in cilantro and salt.
- Serve in small bowls for personalized dipping and enjoy.
