Creamy avocado mousse with macadamia, coconut crust. A tart whipped treat perfect for your summer shindig.
Certainly there is a time and place for everything and while you may or may not be into eating an ‘avocado mousse pie’ on your birthday it is an option.
Creating nutrient dense plant-based recipes for all occasions is an aspiration of mine.
Does that mean you shouldn’t enjoy your favorite empty calorie desserts or treats occasionally? Absolutely not, quite the opposite actually. There is room for all foods in a healthy lifestyle. But why not also have a nourishing and delicious sweet recipe to bring to the table.
What is so wonderful about Avocados?
Avocados really are a special fruit, they taste incredible, add creaminess and have an awesome nutrient profile too rich in the monounsaturated fatty acid- oleic acid known for its inflammation reducing properties and heart healthy benefits. Fiber + vitamin k, folate, potassium, magnesium, iron and zinc.
You just might love Citrus Avocado Mousse..
Citrus Avocado Mousse reminds me of an upgraded key lime pie. The avocados have a very neutral flavor the mango and lime juice take the stage, while the crust adds a little bit of coconut nutty crumble.
The portion for this recipe is a serving ideally for 1-2, for those cases when you have an avocado that is quietly demanding to be cut and scooped right NOW. Not tomorrow morning unless you’re into brown avocados, I’m not. But you can also double the recipe and make into a larger dish for entertaining guests.
