A creamy avocado cucumber salad- lemony, bright and full of summer flavors.
Simplicity at its finest. My boo gave me the idea to share this salad with you all, it’s something we make all the time and absolutely love.
Likely because it comes together in less than 10 minute making it perfect for weeknights. Plus it has loads of fiber, fats, protein,vitamins-A, K,C, and minerals like potassium, calcium, magnesium, iron and manganese.
Pro-Tip: When to choose Organic..
Eating the skin? opt for organic (cucumbers, cherry tomatoes, cilantro). For the avocados and lemons, if you choose conventional vs. organic make sure you wash off the rinds before cutting to avoid transferring farming chemicals like pesticides and herbicides into the finished salad.

Cilantro adds a delicious flavor but also has amazing health benefits including:

Ingredients
- 2 avocados, halved and scooped
- 1 cucumber, cubed
- 1 cup cherry tomatoes, halved
- ¼ red onion, finely sliced
- 1 handfuls cilantro, rough chopped
- 2 tablespoons extra virgin organic olive oil
- 1 lemon, juice
- black pepper to taste
- sea salt just a pinch
Instructions
- Add all prepped ingredients to a large mixing bowl stir to coat with oil and lemon juice
- Serve and enjoy!
