Cabbage is one of those veggies that works itself into dishes on a weekly basis with its versatility, crunch and pleasing flavor. Today cabbage is taking the lead as we share a Nourishing Cabbage Slaw with Shallot Lime dressing.
What is it good for?
When we say ‘it’, we’re talking Cabbage of course and to be honest, the answer is quite a lot.
Cabbage is a cruciferous vegetable in the same family as kale, broccoli, Brussels sprouts and cauliflower. Of the lot cabbage is the most neutral of flavors, so if you are not keen towards kale or broccoli maybe a good starter veggies for those trying to introduce in more vegetables as cabbage is less bitter, crunchier and well less green- we eat with our eyes too. While being less green does make a difference in the nutrient components of say kale versus cabbage. Think less chlorophyll- which is responsible for the green pigment which is rich in vitamins A, E, K . Let’s not sell cabbage short. Cabbage has a wealth of health benefits to offer from rich in soluble fiber which is excellent for out digestion and keeping things regular.
Cabbage still maintains the “thick skin” equable for the cruciferous family which works out beautifully for batch cooking since cabbage holds up well even after being dressed with oils/vinegar/citrus- for a few days without becoming water logged.

Nourishing Cabbage Slaw with Sesame Shallot Dressing
Shredded green cabbage is the foundation for this slaw with carrots, protein rich edamame, crunchy shaved almonds massaged- yes you heard correctly you will massage this cabbage with both hands in a sesame shallot dressing with a pop of lime to help bring the flavor together and establish the perfect texture. Nourishing Cabbage Slaw is an excellent dish all by itself since it is loaded with fiber rich carbohydrate from cabbage and carrots, healthy fats from almonds, sesame and avocado oil and protein from edamame. Make a batch of this in advance and it will keep in the refrigerator for 3-4 days.

Ingredients
- 1/2 green cabbage head, shredded
- 4 carrots, grated
- 1/4 cup almonds, sliced
- 1/4 cup cilantro, fresh chopped
- Dressing
- 1 shallot
- 1 lime, juice
- 1 tablespoon avocado oil
- 1 tablespoon toasted sesame oil
- 1 tablespoon coconut aminos
- black pepper
- pinch of salt
Instructions
- In a large mixing bowl add cabbage, carrots, almonds.
- Add all dressing ingredients to blender, blend on low- medium until smooth texture.
- Pour dressing over cabbage slaw and massage slaw with hands.
- Garnish with sesame seeds. Serve cold and enjoy.
