Pad Thai ordered from a local restaurant can be super salty instead swap out a few ingredients for a nourishing alternative but still super flavorful. Yes the ingredient list is pretty lengthy, but each one is well worth the thought for cooking up a super tasty dish.
Peanut-y Pad Thai
Ingredients
- 8 oz. pad thai rice noodles
- 2 eggs, scambled
- 1 cup of broccoli florets
- ½ cup bean sprouts
- ½ onion chopped
- 2 cloves garlic minced
- 2 scallions chopped
- 2 Tbsp. peanuts crushed
- 1 1/2 Tbsp. coconut oil
Peanut Sauce
- 1/3 cup coconut aminos
- 1 Tbsp. peanut butter
- 1 Tbsp. red chili sauce
- 1 Tbsp. toasted sesame oil
- 1 tsp. coconut sugar
- 1 tsp. white rice wine (mirin)
- juice of 1 lime
Instructions
- In large pot bring water to a boil.*
- In large skillet on low-med heat coconut oil. Once hot add onion, and then garlic sauté until translucent add broccoli, sauté until bright green and slightly tender.
- In meantime make sauce by adding all sauce ingredients to small bowl and whisk until smooth.
- Remove broccoli from skillet set aside. Add a little more coconut oil to skillet, as needed, pour in scrambled eggs while cooking. Add noodles to hot water, cook for about 5-7 minutes.
- Pour noodles into skillet with eggs, veggies, bean sprouts. Drizzle with peanut butter sauce using tongs to stir and dish into bowls. Garnish with scallions, crushed peanuts and lime wedges.
Notes
*Save about 1/2 cup of starchy pasta water before draining out noodles to slowly add to dish if needs a little more fluid, you can also use a touch (1/3 cup) of vegetable broth as needed.
