This salad is also perfect to spoon onto a leafy bed of lettuce with your choice of dressing and protein like tofu, tempeh, chicken or hard boiled eggs.
Habanero Four Bean Salad
Ingredients
- 1 15 oz. can chickpea, drained & rinsed
- 1 15 oz. can cannelloni beans, drained & rinsed
- 1 15 oz. can red kidney beans, drained & rinsed
- 2 cups green beans, chopped
- 1/4 onion, finely sliced
- 1 handful cilantro, roughly chopped
- 1 habanero, finely sliced
Dressing
- 1/2 cup apple cider vinegar
- 1/4 cup olive oil
- 1/4 cup coconut sugar
- pinch of salt
Instructions
- Add beans to a large bowl
- In a separate bowl combine all ingredients for dressing, whisk well and pour over beans
- Stir to incorporate, then add habanero pepper and cilantro.
- Let marinate overnight in air-tight container for full flavor or serve and enjoy right away.
